We are using this in our application to do an XSLT transformation and generate TIF file - If the data generated is multiple pages, the TIF file has only one page. Is there a way to tweak APOC to handle this? We are using version 2.0.

It's impossible to provide support since there is no troubleshooting or any other information about the software. I have tried to look for available resources, but there was nothing on the web. It's known that TIF can handle multiple pages, and I recommend checking the configuration instructions in order to use multiple page support. If you have the software installed in your computer, go to Help > Contents and look there for instructions for the application.
